Pasta With Peas: A Recipe By The Missoni Family

mf2 Don’t listen to the gluten-free obsessed: eat carbs, they are good for you. Here is a recipe directly from the Missoni family kitchen, and it’s Italian pasta, obviously. In order to feed 4 people you will need: 800 grams ┬ápeas 350 grams

In order to feed 4 people you will need:

  • 800 grams ┬ápeas
  • 350 grams maccheroncini rigati pasta
  • 60 grams pork pancetta
  • 30 grams butter
  • 1 spring onion
  • parsley
  • grated parmesan
  • a bit of broth
  • salt and pepper

Shell the peas; in the meantime, chop the pancetta, the spring onion, and a handful of parsley. Put spring onion and parsley into pan over low heat, then add the peas and a little broth (about a cup). Add a pinch of salt and pepper and let it cook while stirring occasionally. Prepare the pasta the usual way in a separate pan. Once it’s done, drain it and put it in a dish with the fresh butter sitting on the bottom. Add the peas sauce over the maccheroncini, add grated parmesan, stir and serve.
